A few cautions: 1) IMAP with Exchange 2003 Public Folders may not implement all of the same verbs/commands/etc. that Exchange 2003 mailboxes do. 2) Exchange 2007 still has no IMAP access to Public Folders. I don't think there's a plan to offer it. 3) Microsoft, in general, is moving this kind of content to WSS3 / MOSS 2007.

But I use outlook 2003 against an imap server and there is a option under edit to "purge delete messages in folder" In outlook 2007 there is an "auto-purge option" as you move between folders So you could use these clients to check that exchange supports the deletion under imap.
