Are you not happy with the move to O365?

first, then just dump the VMs.  But my concern is the schema changes, and the 
Exchange security groups OU.  If I uninstall through Add/Remove, does that last 
one go out and clean up AD?  Or is there something else that will need to be 
done as well?  Or, do I need to keep the AD stuff, since we're connecting to 
the cloud solution, and managing all our mailboxes through ADUC and ADModify?
