To be clear:
Her email address is [email protected] and now she wants 
[email protected], right?

Properties on her user object in EMC. Email Addresses. Add the new address and 
set it as default. This will not affect her logon. She will continue receiving 
mail sent to the old address but new mail will go out under her new address. 
She can add a line to her .SIG to alert her correspondents to change their 
address book entries.
