If you delete the device association from Exchange and delete the mailbox from the device you have a "clean slate". Then you can configure the mailbox on the device. And run a sync. You'll know whether or not it succeeded and you'll get a fresh association on Exchange. You can also troll the IIS log files after that, to see a packet-by-packet set of information as to how the sync went. You can use "log parser studio" to analyze the IIS logs. If you are asking about something "after the fact" - I'm not aware of any method for that.
