You've gotta write a transport agent. I happen to know that Glen Scales (another Exchange MVP) has done this (i.e., written a transport agent to do pretty much exactly what you want). But he develops Exchange applications for a living, so it may not be free.

Users that have been moved started not receiving emails from their PLM system, after a little digging I found out the PLM solution did not include a from smtp only a display name when sending emails. Our exchange 2010 server didn't seem to care, but o365 won't accept emails with no from smtp (our exchange 2010 shouldn't have either) Now they are telling me they don't know how to change the PLM system to include a smtp address, is there any way I can have a transport rule add a from smtp only from emails from the source IP of the PLM server?
