Good!
List servs are not going to do anything with the OOF except propagate
it.
They don't read those messages, and by sending one, you are confirming
that it is a good address and to KEEP sending. Chances are a bounce
message would get you unsubbed faster.
Here is what I have done.
Person quits
I go through there mail for a couple of days, unsub the user, send some
emails to their girlfriends, etc.
Delete the account
Put them in a "catch all" mailbox I have created called Ex Staff.
Clean out that mail box once a month or so.
