The only time I ever perform offline backups is if the server is offline for
some other, major reason -- like migrating to new hardware that can't be
done using Ed's move server method, if I have to do a restore and I don't
have a restore server, etc.

There's NO need to do offline backups regularly.  The way to determine that
your online backups aren't working are test restores.

how often you perform full offline backup of mail database? is it practical
to perform offline backup every friday after the full online backup? i used
this setup in case my online backup failed.
