Use outlook express, there you actually have the functionality to turn it off. Or, turn Outlook into the Internet Only mode (IMO) and you can choose not to send receipts. (although I know there is a reg hack mentioned in TechNet that explains how to make the server stop sending receipts like the all/none solution mentioned)
