Saw one at the bookstore the other day by Kieran McCorry and Donald Livengood, about MSExchange2000 infrastructure design. Sounds like this might be up your alley.
For day-to-day management, I'm keeping an eye out for Paul Robichaux' "Managing E2k..." from O'Reilly and/or Jim McBee's "Exchange 2000 24/7".
