May I suggest that you use the IIS Service that comes with the NT Option Pack to do relaying in the firewall. It's far simpler than Exchange and will do just what you want. If you're running MS Proxy, you can even run it on the same server. If you go down this path, then search TechNet for "8bitmime" and implement the registry setting so it works right with Exchange.
