You can change it in the Default SMTP Virtual Server Properties using the
Advanced option.

Hi

We have multiple Exchange 2k servers. 
Is it possible to change the SMTP port from the default of 25 to something
else.? as another software that we use uses port 25 to capture all SMTP
traffic and then pass it on to the Exchange server. 
This software is also installed on the same server as Exchange is.

We were able to do this with Exchange 5.5 and IMS.
