You can connect two organizations for mail transport by using an SMTP or X.400 connector.
You can actually have some measure of directory replication if you use the unsupported method of connecing them with a MS Mail Connector and using Dirsync. (Stop shuddering everyone!) Or you can throw some money the way of MCS or my employer and use Microsoft Metadirectory Service, or buy my employer's LDSU product. Other third-party products exist that might help.
