As your Exchange Server is only a member server I don't see any reason not to just change the domain - as long as it can reach a domain controller in the domain where the user accounts are to authenticate the mailbox owners etc. all should still work. Beware of removing the exchange service account though - even if you create an identical account in the new domain it won't work, you'll need to reinstall Exchange.
Safest way of doing this if you have the spare hardware is to build a second server in the new domain and transfer all of your mailboxes across bit by bit, then your public folders, then your connectors etc. It's not as harrowing as it sounds and you can take your time and test at each stage. If you do just change the domain of the server then take a full offline backup first by stopping all of the services then backing up everything on the server, that way you can recover quickly if anything unpredictable happens.
