Create a custom recipient with the internet address the same as the address you wish to forward to. Either create a rule in outlook to forward to the custom recipient or on the mailbox properties of the user in exadmin, go to the 'Delivery Options' tab and select 'Deliver to alternate recipient'. Obviously make the 'Alternate recipient' the custom recipient you created earlier.
