Unless someone has access to the console, or can otherwise somehow reach the
drives and directories containing the Exchange files, there is no reason for
any of them to be missing, so I still don't get the point.

What you're talking about is the first step of full documentation.
Practically by definition due to the presence of other options the best
route is to document your own installation and update it as needs occur.
Knowing what other admins may or may not have on their drives doesn't
necessarily give you the kind of info you need to maintain the enterprise;
another admin may be running a hotfixed version of one of the components or
something else odd that still has nothing to do with your own environment.
