You could create alias DNS and WINS entries for POP3 and IMAP clients. True, you'd probably have to change the server name once, but you'd never have to change it again. Create an entry for mail.company.com, point it to the server in question and then when the mailboxes are moved redirect the DNS and WINS entries.
I would suggest you do that for the old server name, but that would effectively prevent it from being used. It really is no big deal for 98% of users to rehome their POP3 and IMAP clients. Just send them out a series of e-mails with clear instructions.
