Have you also done the reg hack on the client that allows you to utilize the full scope of deleted items retention? i.e. if the items were per chance hard-deleted (shift + delete) then they bypass the deleted items container. There is a registry hack that you can add - search Technet for dumpsteralwayson. It allows you to use "recover deleted items" for every folder.
