The only thing I've got to say is that the only IS issues I've EVER experienced have been due to disk subsystem issues.
So, if you've had IS problems, the natural conclusion would be that it's the disk subsystem. To me its must less an issue of the databases being on a NAS, and much more an issue of trusting snapshots to accurately back up the stores, and more importantly to perform the database maintenance that is done with an online, database (Exchange or otherwise) aware backup.
