Use one virtual server. Make additional recipient policies for your additional domains. Point your MX records for those domains to your Exchange server.
OWA will work when you make certain that each user has an SMTP address that matches the SMTP address in the default recipient policy. Note that it doesn't have to be their primary, it just has to exist.
