Read http://www.faqs.org/rfcs/rfc2822.html and digest carefully.
Emails with a "From: <>" header are delivery notification messages. RFC2822 says mailers must accept these messages (they can, if I recall correctly, do what they like with them). There are an awful lot on non-RFC2822-compliant mail servers out there.
