It's in the FAQ for 5.5, and it's in the FAQ for 2000. I would have gotten more specific, if you had said what version of Exchange you were using. That's important info. But "look it up in the FAQ" will get you there.
In 5.5 it's in the properties of the IMC, to require auth.
