How much memory Store.exe consumes should have no consequence on network latency. You should check your NIC settings - make sure that it is on a switch and that both the NIC and switch port are set to 100mb/full duplex. If it is on a hub, set it to half duplex. Make sure that there are no name resolution issues. This definitely sounds like a network problem, not an Exchange problem.
