If you have a multiple servers scenario, it would be more difficult to do this, but if you only have one server, with only one container, you can do something similar.
You can configure exchange to send a copy of all the incoming e-mails (that were sent to any mailbox in that container) to a specific mailbox. I don't know if that works with the messages that were sent to a mailbox that doesn't exist. It looks like some mail services (like hotmail) first check to see if the destination mailbox exists and only then they send the mail. I haven't tested it, but I think it works that way.
