In two weeks we will be migrating our Exchange storage to a Compaq SAN. With Compaq you can specify a preferred path to disks so that a specific server or cluster has access to those disks--no other system has access unless you configure the SAN to allow it. The default for Windows systems is to allow access to all disks. You have to disallow this before bringing the system online. In our testing the Compaq SAN worked fine.
