You'd need to work out why the Service Account is logging on. Typically it would be as a result of a virus scanning utility, Exmerge, Brick-Level backup, etc. Eliminate those and you might start getting some more accurate figures.
Alternatively go to a third party vendor and get a reporting tool that can tell you the date of the last sent item or the last read item.
