Dave,

Here's your problem...I had the same problem, when removing the first server
in our site.  Change this over, and you won't have to change a single
profile:

Changing the Site Folder Server 
If the Site Folder Server is removed from the site, Exchange will
automatically discover the problem and select another server, but this may
take several hours or longer. 

The site folder server has responsibility for verifying the validity and
existence of the Offline Address Book (OAB) and the Schedule+ Free Busy
(F/B) folders.

Question...  Based on this new information could I leave the old server up
and recreate the profiles (again) and then bring the server down without a
issue.

This is the _exact_ steps that I took to move that accounts in the first
place..

Shut remote center down
move all accounts
login into center
recreate profile (some just a check name and remove add OAB some
progem.exe)
log onto server with remote client
repeat 1200-ist times

Now with this info add..
turn off server....
repeat again?

or

Leave server online
rebuild profile again
turn server off.
