Dave, Here's your problem...I had the same problem, when removing the first server in our site. Change this over, and you won't have to change a single profile:

The site folder server has responsibility for verifying the validity and existence of the Offline Address Book (OAB) and the Schedule+ Free Busy (F/B) folders.
