Exchange keeps all mail (and other objects) in a special database called the "Information Store". The files are, by default, kept in the directory: C:\Program Files\Exchsrvr\MDBDATA\ A number of different files and formats exist in that directory -- private and public ESE database files, private and public STM database files, database transaction journals (logs), and maybe one or two other things.
