Jeff, umm, pretty much any event with a class of "Error" (as opposed to information or warning errors). Exchange is pretty good like that. It depends on what you are trying to look out for / prevent. Exchange can literally fill the event logs every few minutes if you want it to (just ramp up logging on everything to full), it depends on what you are trying to look out for.
But, watching for critial / error events is a good start. Most halfway decent event log tools can filter by Error / Critical events.
