Import the Exchange tracking logs into a database and analyze them. You will be amazed at the interesting data than can be harvested in the tracking logs, particularly in a large organization. If you have a database person at your disposal, they will have a field day with them. Even with little to no database experience, you can make some nice reports with Access. There are a couple of KB articles explaining the log format and various events.
