I would recommend that you stop scanning files on your exchange server, or
at the very least, exclude the exchange directories.  This is considered by
many as a necessity on your exchange server.  Simply an update of your virus
signature definition files could in fact cause problems that you have never
encountered before.  (Been there, done that)

Most of the time it is due to misconfigured AV software.  What AV software
are you running?  Is it scanning the files, information store, or both?
