No, the org name is specified prior to the installation of E2K because that information was required/gathered from the ADC installation. The E2K org name is based on the display name.[1] The Exchange site name doesn't change, nor can it be changed that I am aware of. When an Exchange 2000 server is installed, you're prompted for the site name to join the server to, the org name is already taken care of since there can only be one Exchange org per forest. And in actuality the org name means even less in AD/E2K than it did in 5.x.
When I was at Simpler-Webb, Inc. our org name was "Simpler-Webb, Inc." that is an illegal domain name. We changed the display name to "Swinc" for the upgrade and for all practical purposes that is the org name now.
