Changing service accounts are in general a real pain in the arse. Especially if you have multiple email servers in multiple sites. Most places just make a group that has the same rights as the service account for most of the general administrative functions and add/delete users to that group as is needed. Only a select few have or knowledge of the account name or password which is usually a complex one that is kept in a safe.
