I just want to change it once, I don't want it to be dynamic. For instance, I want it to be from Domain2.com instead of domain1.com all the time.

I don't think you can customize it so that the postmaster domain changes depending on the domain of the intended recipient. A possible workaround may be to all undeliverable mail for a given domain to be forwarded to a different server for delivery.
