That would be a mail-enabled contact that you'd create, and the target address can be any valid external address. Be sure to get it right so you don't end up with a mail loop. Then in the alternate recipient attribute of the mailbox you're copying, enter that mail-enabled contact you've just created. After doing that, you can hide it from the Global Address List.
