I use VPN all the time and rarely if ever have problems with it dropping... In fact I'm trying to remember back to the last time I had that problem and it's been several years or more. So, dropping it because it's unstable seems to me to be a issue of implementation rather than technology based on the information provided.
Feel free to take a look at your current RPC traffic between Outlook and the Exchange server without that checkbox marked and get back to me at your leisure on how easy it is to read.
