So you really expect that someone reading this will go run the CIW to find the answer to your question? YFR.

I ran the Custom Installation Wizard to create an MST file to specify options for Outlook. I then create a GPO that assigns the msi file for Office modified with the MST. What I want to have happen is that Outlook opens, the setup wizard doesn't start, and the Exchange mode is chosen, along with the server I specify, and with the correct mailbox. In the Custom Installation Wizard (CIW), part 14 (for Outlook), what should be the options I choose? In the Exchange Settings section, I enter the name of the server, but that doesn't seem to effect anything. At the moment, the Outlook Setup Wizard runs the first time Outlook is started, if I choose to use MS Exchange Server, the correct mailbox is filled in, but the server textbox is empty. Can I use the CIW to avoid the setup wizard?
