Imagine your antivirus program quarantining (by moving the file) your message store file or cleaning it by removing a piece out of the middle of it. Either way, you'd be screwed. Never scan the Exchange directories. At the very least use a SMTP scanner for inbound mail and a file system scanner on your workstations to catch users who may introduce a virus.
