Add the deleted items (kb) field to the view of the mailbox store / mailboxes leaf of the Exchange System manager and total the sizes used. Or I believe the perfmon object MSExchangeIS Mailbox/Total size of Recoverable Items and the corresponding field for MSExchangeIS Public will provide this information as well.
