Allright, but if I install a new server on the network with the same org
and site, the server will become member of the excisting exchange site,
and therefor replicate settings and so on, couldn't this just bring a
problem on the production server to the recovery server?

Is it possible to make the new server member of the domain and then
bring it offline again and install exchange then? or does it need to
"talk" to the domain controller in the proccess?

You'll also want an additional domain controller that you can take
offline with this Exchange server on an isolated network to practice the
server rename, installation and database configuration required to get
the server back up and running, and you'll want to practice this on a
regular basis.
