The RAM behavior is normal and intended. Exchange will use all available RAM and will relinquish it to another process if needed. I suspect the two things you report (RAM usage and spontaneous reboots) are unrelated.
Are there anything in the Event Logs from before/after the reboot? Can you configure crash settings (Control Panel, System) to create a dump log and see if anything shows up there?
