Personally, I evaluate the impact of the update to my environment. Some critical updates never get applied. For the rest, I generally test them in my lab and then apply them once I understand what the potential impact of them may be to my environment. Occasionally, I may delay or escalate the testing and deployment to coincide with a scheduled maintenance window.
