Have you deleted the original Exchange server entry using the Exchange admin tool? That would be the first place to start.
Secondly, there are a few KB articles in TechNet that will help you remove orphaned folders. Search for "Orphan Public folders" and select Exchange 5.5 or "all products". That should be a good starting point for your journey.
