Because you're looking at different security descriptors. The only thing you can see through ADSIEdit is in the Configuration container of the AD. Under Services/Microsoft Exchange is the "top" of your Exchange organization. From there down the security descriptors that exist are inherited by the mailbox stores and therefore the mailboxes.
