Ex5.5?

1) install, configure and format the additional drives.  
2) Run the 5.5 Performance Optimizer, which will move the stores to the
location you specify.  It will need to temporarily shut down the Exchange
services while it makes the updates.  The small downtime will also depend on
the drive config and the size of the store(s) being moved (i.e. downtime will
be determined by the time it takes to copy these files).
