I would hesitate to do it that way as well because once the message has been
delivered to the offsite address and replied to, all successive replies will
go offsite and never reach the exchange server. So you will only have the
original email and no replies from either party for tracking purposes.

Yes it can, but I wouldn't do it that way. You would have no record of what
is going on with him. Since he is using a company mailbox there should be
some record.
An easier way would be to setup a mailbox for him and then a custom
recipient with his email address. Then go to his mailbox properties in
ExAdmin and go to Delivery Options, and set the custom recipient as the
alternate recipient and check the box about delivering to both the recipient
and the alternate recipient.

BTW, this is for Exchange 5.5. Since you didn't mention your version, I have
no choice but to assume you have the same one I do.

contractor with an Exchange mailbox who is only in the office part time and
