Brent,

"Computers" isn't a container in AD - it's a folder and therefore can't have
a policy applied to it.  The only policy that will apply to "Computers" is
the default domain policy so it doesn't matter where you move your Exchange
server the default domain policy will still be applied unless you block
policy inheritance on the OU you put the Exchange servers into, but then you
must re-apply all the required policy objects on the new OU.  Yes you can
move servers to any OU you like but you must make sure the right policies are
being applied.
