It’s one method.

I would prefer to unhide the mailbox for a short period of time, make the 
send-as change, then hide the mailbox again.

Is this the right method for "send as" for a hidden mailbox. We had admins that 
were not able to send as for their manager after someone hid the mailbox.
Can not send as a Hidden Mailbox
You can actually send as or on behalf of a hidden mailbox. You must create a 
local contact in outlook first.

1. Add a contact into your Outlook for the shared mailbox:
Do so by going to an existing email with the email address in the To… field, 
right click, add to contacts (this is important to create the contact in this 
manner)

2. After the contact is created ...Click on New Email
3. Click on the From button, select Other E-Mail Address, click on the From 
button, change the field to Contacts, find your new shared mailbox contact

4. Send email to yourself for testing
