Create a junk mail box. Enter all of the smtp addresses of these former employees to that mailbox. Unsubscribe each user from these lists/newsletters/etc using this mailbox. You may have to set the reply address for individual users to unsub from some of the lists. It's cumbersome, but once you get it under control, it becomes easier to maintain.
