Leave the old domain name intact so that users can still get mail to their old addresses, unless you want a bunch of peeved users.
Use directory export to pull a copy of the GAL. Move the SMTP:[EMAIL PROTECTED] field out of the E-Mail addresses column, change SMTP: to smtp: and put those addresses in a new column you'll call Secondary-Proxy-Addresses. Sub in the new addresses with the format SMTP:[EMAIL PROTECTED] in the E-Mail addresses column.
