All you need to do is add the multiple domains into the recipent update service and it will host those 5 domains. On the SMTP connector you simply need to add that users must first authenticate before they can send mail. Then let the remote users know that they must turn on that option in either Outlook Express, Outlook or whichever client they use. This will get you around the open relay options.
Im no guru, but if smtp is open exchange will accept any inbound mail for any domain that is sent to it, it will attempt to find a delivery mechanism and fail if none are found.
